Broccoli with Olive Oil (Salad)
300 g broccoli, 2 tablespoons of pine nuts, sea salt, white pepper, juice of half a lemon, 6 tablespoons extra virgin olive oil, 2 tablespoons Parmesan cheese.
Wash the broccoli and remove the thick stalks. Only use the heads and tender stalks. Steam the broccoli for about 4 mins., so it is still firm to bite. Roast the pine nuts in a hot pan without additional oil. Serve the broccoli on preheated plates. Sprinkle with sea salt and pepper, lemon juice and oil and finally sprinkle the pin-nuts and Parmesan cheese.
